The wonders of Vietnamese food *droolingface
Stir fried rice noodles, or Phở Xào could be found at any corner of Hanoi, Vietnam these days. I still remember the times we cousins bounced around Hanoi for a whole day looking for good street vendor foods. Chi Thu was the oldest one, and she knew all about Hanoi’s finest street vendors. Phở Xào was one of our many favorites, but somehow only this dish brings back the most vivid memories of my teenage years spent with my sisters and cousins.
Without further a due, here’s a simple yet delicious version of Hanoi’s Phở Xào.
Ingredients: (2 servings)
- Rice noodles – half a package (7 Oz. or 200 grams)
- Beef – 1/2 lb (250 gr)
- Bok choy or any green leaves like spinach (You can easily get bok choy at Cub Foods, Cashwise or Coborns) – 2 hands full
- Onion – 1/2
- Salt, pepper, cooking oil
- Optional ingredients: fish sauce, soy sauce, and oyster sauce (all three can be found at any big grocery stores in the States, or even in South Africa if you asked me)
Now’s the fun part: Let’s make it happen!
- Boil a pot of water that is big enough to soak the noodles. Use your judgement.
- Chop the onion. The trick is to rinse it with cold water first. That will save you lots of tears.
- Now your water is probably boiling, add the noodles, turn off the burner, let it sit till the noodles soften. It might take 15 minutes.
- Cut bok choy into small pieces. You’re asking how big, it’s all up to you. I’d prefer finger length. If you use spinach, no need to cut anything, just rinse the leaves.
- Thin slice the beef.
- Remember that pot of water and noodles? Pass the noodles to a strainer to dry. Use that same pot (smart, right?), brown the onions in cooking oil (burner is on medium high).
- Add beef and vegetables in the pot, stir fry till the beef is done, and the vegetables are still a little crunchy. Add enough salt, pepper (fish sauce, oyster sauce and soy sauce if you have them). You might have to taste to make sure it’s tasty. Pass this mixture to a plate.
- Re-use that same pot to stir fry the noodles in cooking oil (burner is on medium). If the noodles are still crunchy, add water. Keep it on the stove till the noodles are soft enough. Add beef and vegetables. Mix them all together. AND TADAAAAA, YOU’RE DONE.

So, this first blog entry is posted on an August day, when I got too bored with studying for my last CPA exam. Out of desperation, I decided I needed to add a little spice to my life (seriously); and hence, this cooking blog.
If you know me, you would know how much I enjoy cooking, eating, and overall, looking at (good) food. I mostly got my inspiration from my mom, who is also a food lover, but most importantly, who cooks with care and love. Mom was the person who taught me most things I know in life, among which is the appreciation for delicious homemade meals. So thank you mom. For everything. Truly everything.
You will find in this blog recipes for all kinds of dishes, from Asian, to American, to Italian, and Spanish. I can’t guarantee I can do justice to these cultures, but I can ensure you those recipes are authentically me 🙂 So, before you further read this blog, here are some of my cooking principles.

- No recipe is absolute. You make your own equation, according to your own taste.
- I hate doing dishes, and I love thinking out my plans before I carry them out. That’s why a lot of the recipes will call for the minimum amount of dishes, and the procedures to ensure the above desire.
- Music is acceptable in the kitchen. Texting is not.
- Most of those meals will take you less time than you expect.

- Even if you eat alone, eat well. Not many people have the chance to do just that.
